This was a hit with my family on Sunday morning!
The amazing Ash Pollard, who has just launched her Eat Me e- cookbook, showed me how to whip this up when she dropped into Studio 10.
It ticks all of my boxes, quick, easy, minimal areas where you can stuff it up!
Ingredients: A packet of bacon, eggs, cherry tomatoes, fresh basil leaves, olive oil, balsamic vinegar, butter, crusty bread.
Method: In one fry pan, cook the bacon. While this is cooking, slice the cherry tomatoes in half, put them in a bowl with shredded basil leaves, Ash also suggests slicing up spanish onions (I left this out as I get bad onion breath!) Drizzle with olive oil and balsamic vinegar and season with salt and pepper. In another fry pan, melt some butter, and lightly toast your crusty bread in the pan, crack some eggs and fry them how you like them. Once everything is cooked, first put your cherry tomato mix on the bread, then rasher of bacon and top with the fried egg. Drizzle some extra balsamic if you want. Season with salt and pepper.
Success rate: Three out of four family members loved this! Petee ate his in about 3 seconds, after complaining about the fat in the pan from the bacon, Allegra told me that I should be on Masterchef (god bless her) and Giselle just ate the bacon on its own!
